This was supposed to have fresh spinach. I went to the Co-op to pick up a bunch and came back with lemon soda, udon noodles, cabbage, crackers, hummus, zucchini, and shampoo. No spinach, of course. - Red peppers stuffed with couscous, feta and mushrooms

I was supposed to make tofu loaf, but instead, I was like, screw it, let's have homemade salsa, chips, and gelato for dinner. I used my food processor attachment for the first time. This has tomatoes and yellow peppers from our garden, lightly roasted poblano and chili peppers, half a red onion, lime juice, cumin and a bit of salt. - Spinach salad with citrus
Spinach, cherry tomatoes, warmed summer squash, fresh orange, walnuts, citrus vinaigrette (which was really just bottled Newman's Own vinaigrette to which I added some orange and lemon juice).

So simple: boiled potatoes, lemon juice, olive oil, fresh parsley, salt and pepper - chill in the fridge. - Baked sweet potato

I didn't want to end a recipe-making challenge without tackling the single recipe that has intimidated me forever. It took 20 minutes of arm-straining whisking, but my first soufflé puffed up in the oven. And it was wonderful.
